The best way to cure this is to bring your Pal into your Palbox and let it recuperate or toss it into a hot spring to raise its SAN.
Sometimes, bloodshot eyes are also caused by your Pal not sleeping enough. Make sure you have enough Pal beds in your base for every Pal to sleep, or else your Pal’s SAN will drain, leading to them developing various illnesses.
